The east end of the Russian River Brewing Company-Windsor Facility, dedicated to aging sour beers, is the Funky Brewery, constructed using a pre-engineered metal building. This structural approach was selected for its cost-efficiency, rapid deployment, and flexibility—ideal for accommodating the specialized environmental requirements of barrel aging and spontaneous fermentation.  At the highest point of this section lies the Koelschip—a traditional cooling vessel housed within the “Funky Brewery.” Lined with untreated wood, the Koelschip is designed to evoke the ambiance of an old-world abbey while naturally cultivating wild yeasts and bacteria, effectively “seasoning” the space for spontaneous fermentation and enhancing the complexity of the brewery’s sour beer program.
